So it is a wonderful coincidence that International Women’s Day is celebrated every year on March 8 – and Pralina Experience wouldn’t miss this opportunity for the world. As our wives, mothers, sisters, daughters and best friends rush around trying to keep up with the demands, responsibilities and obligations of work and family life, we have dedicated one of our most delicious recipes to these special women in our lives, for all to enjoy in the warm and welcoming setting of our restaurants. Close your eyes and you can almost taste it: the intensity of crushed black pepper bursting in the smooth and creamy Parmesan sauce with black truffle peelings. The ravioli filling itself features the distinctive flavour and texture of Pecorino cheese, skillfully captured in the thin and perfectly baked pasta. The beautiful presentation is in itself a gastronomic experience, offering you a sophisticated, contemporary variation on the original Italian tradition that dates back to the 14th century but has meanwhile charmed its way into kitchens around the world. Indeed, our chefs’ version of cacio e pepe ravioli proves that a basic recipe that has been around for ages and which is based on relatively simple ingredients – such as Pecorino and Parmesan cheese – can be reinvented by infusing it with a very special ingredient: culinary creativity.

To enhance your taste experience and your celebration, combine our cacio e pepe ravioli with a superior aged aromatic wine from the Langhe Hills region, which ranks among the top wine-producing regions in Northern Italy. Ask our sommelier, and he’ll recommend either the aged white Gaja Rossj-Bass Chardonnay 2019 or the aged red Marchesi Di Barolo, Cannubi Barolo 2005, depending on your personal preference. With their earthy aroma and hints of mushroom, both wines perfectly balance the saltiness of the truffles and Pecorino cheese, to deliver complete harmony on the palate.
